1. I've never stayed for longer than a day. But I've always lived less than 4 hours away from Cooperstown. I think you could cover everything in a leisurely manner in 2 days though.
2. My interests are only baseball. So I check out the Museum and the many memorabilia/card shops in the village. But if you want to go to other places, they have other museums (Farmers Museum, and I think there's a cave/caverns museum near there). It's also turned into a big destination for baseball youth tournaments.
It's a small town so there is not a lot of "places to go" outside of the main attraction. For restaurants and the like, there are a few, but I'd recommend nearby Oneonta, or my hometown of Binghamton, which is a little more than an hour away.
We have been there twice. Just a couple days the first time. One week the last time. If you buy a membership to the Hall, you get free, unlimited admission to the museum for one year. Three trips to the museum paid for the membership (we went 5 times !). There are many,many shops throughout Cooperstown. mostly baseball related, but not all. My wife very much enjoyed shopping. There is also Doubleday Field (you might catch a game if you are lucky) and a nice lake. It is very much out in the "sticks"! There were no malls, big box stores or big cities nearby. It was a very nice, peaceful week for me, my wife and our two sons. We had a room just a block off main st. Pricing is not bad if you go in the "off" season. Check the dates and room rates.
We also went to K.C. to the Negro League Museum and the Indians were playing there at the time. That was a very nice trip also !
A weekend is plenty in Cooperstown. I have been a few times. You can do the museum in 2 half days and when you get tired of being history, there are lots of great baseball card shops up and down Main Street. Also, see Doubleday field.

I don;t know if they still do this, but when I last went, if you went after a certain time in the evening, the ticket was good for the following day also....so 1.5 days was enough to see everything in the museum.
I also remember taking a boatride on lake Otsego and visiting Doubleday field....also make sure to get a picture by the only traffic light. (maybe there's more now)
Go tour the Ommegang Brewery! Good stuff, great beer!!
